Baked Oatmeal

Baked Oatmeal

(this is adapted from THIS recipe at Money-saving Mom!)


3 cups oats
2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 cup honey (or other sweetener)
1/2 cup applesauce
1/4 cup melted coconut oil
(can substitute butter or other oils for the applesauce & coconut oil to equal about 3/4 cup)
1/2 cup yogurt
1/2 cup whole milk
1 tsp vinegar

Throughly mix all ingredients and pour into a greased 9" square baking dish. Drizzle top with molasses if you would like! Refrigerate overnight. Bake at 350 degrees for 45-60 minutes. Serve hot the way it is or top with butter, jam, maple syrup.........

(I have also made this in muffin tins and that worked nicely. It also doubles well, bake in a 9x13 pan. Stores well for leftovers or morning snacks!)

  1. Wow! This looks incredible. Kind of like rice pudding made with oats instead. I love that it contains eggs. I will have to give this a try.

  4. Whoa, is there a reason for all the honey? Is this intended to be a dessert? If we're having regular oatmeal (1/2 C dry per serving), the most honey I'd put on is about 1 tablespoon per serving. With your recipe using 3 C oats, that would equal about 1/3 cup of honey.

    It makes the dish even more nutritious when the oats are soaked.

    I make 2 (9x13) pans a week.

  6. You could cut back on the honey :-) I used just shy of a cup and adapted it down from the original recipe which called for white sugar. Start with less and see how you like it!

    It does make more a consistency of muffins or "coffee cake" vs reg oatmeal.

    AND if you make this the night before - you can accomplish at least the "cheaters way" of soaking the oats!

  7. To do the "real" way of soaking, just mix the yogurt and milk with the oats for 12-24 hours, then mix the other ingredients in. Simple!
